Quick and Easy Pasta Primavera

Pasta Primavera with Chicken

Ok Everyone.  This is going to be quick.  Because school is almost out and we need a couple new, quick, EASY, dinner fixes to get nutrition and energy on the table…fast. And that, my dear friends, is exactly what this does!

NOTE:  This is actually more of a cooking strategy you can adapt to whatever you have on hand so it tends to be really quick and is a great clean up the fridge meal!

I love this because…

It’s quick and easy,

It’s full of flavor and…

It’s chock full of healthy veggies!

So without further adieu…

INTRODUCING…..Laura’s Choice Quick and Easy Pasta Primavera!

First – let’s gather some ingredients shall we?

I usually just choose whatever veggies happen to be on sale at the market and in my fridge at any given moment (leftover ones work great here) and slice/chop them up (you’ll also be happy if you have some leftover chicken or shrimp or pork or steak to throw in for a protein kick too – stay tuned)! 

Oh, and pull out what ever pasta you have on hand, the EVOO, a clove of garlic, some Parmesan and S&P.  Now you’re ready.

Pasta Primavera Ingredients

Step 1.  Cook your pasta according to directions.  Don’t forget to season that pasta water generously with salt!  It makes a huge difference!

Step 2.  Sauté your veggies in a little EVOO that you’ve heated and sizzled your smashed garlic clove in.  Add a little S&P to taste and mix in well. Remember not to let your garlic burn!  It only takes a minute in a hot pan to infuse that oil with its flavor!

Cook your mixture til it looks like this…

You’ll see I used…zucchini, yellow squash, a little onion, corn I had leftover from an “on the cob experience” earlier in the week, some frozen peas, fresh green beans, and a few carrots all nestled together and juiced up with the “garlic-ed” EVOO.

Step 3.  Next, I heated up some leftover chunked rotisserie chicken I happened to have on hand (but this dish is great with just the veggies too!)  in the microwave for a minute or so and added it, along with the veggies, to the drained pasta in a big ole pasta bowl!

That got topped with some halved grape tomatoes that were screaming to me from my counter top and freshly chopped parsley, along with a healthy dose of Parm Cheese and some more EVOO.

Toss this baby up.  Keep tossing.  That’s right, get all that cheesy goodness spread throughout.  Add a little pasta water if you need a little more moisture…and some more S&P, if you wish.

Quick and Easy Pasta Primavera

Prep Time: 10 Mins Cooking Time: 10 Mins Total Time: 20 Mins

Ingredients:

  • 1 box of pasta – your choice
  • 1 clove of garlic – smashed
  • ¼ C plus 2 TBS or so of Extra Virgin olive oil
  • 2-3 C of various sliced and chopped vegetables such as zucchini, yellow squash, sweet onion, carrots, fresh green beans, corn, peas, carrots, etc.
  • 1 pint halved grape tomatoes (optional)
  • 1 C cubed or shredded rotisserie chicken or any other protein (optional)
  • ¼ C fresh chopped parsley
  • ¼ C Parmesan cheese – plus more for sprinkling
  • S&P to taste

Directions:

  1. Cook pasta according to directions on box. Be sure to generously salt the water prior to adding the pasta.
  2. While pasta is cooking, heat 2 TBS of EVOO in a sauté pan over medium heat and infuse with the smashed garlic clove, being careful not to let garlic burn. Remove and discard garlic when it is golden brown or after about 1 minute.
  3. Add vegetable medley to pan and sauté in the garlic infused oil about 5 minutes until vegetables are tender crisp or to desired degree of doneness.
  4. Drain pasta, reserving ½ C of starchy pasta water. Set water aside.
  5. Combine cooked pasta, sautéed vegetables, chicken and tomatoes (if using) ¼ C EVOO, ¼ C Parmesan, and parsley. Toss well to coat.  Add a little of the reserved pasta water for extra moisture if needed and toss.
  6. Great with crusty bread and a green salad if desired.

Laura’s Choice “Coastal Decor”

Sea Shells

“She sells seashells by the seashore…” Well I’m not exactly selling them actually.  Just collecting.  And with my collection I made my first ever ‘Coastal Decor’ wreath.

Hmm.

Actually, if you must know, it’s my first homemade wreath. Ever. (And it probably shows, but you’ve gotta start somewhere) :o)!

Oh sure I’ve bought them before, but this is my first stab at making one.  And let me just say that that’s because of a very good reason – crafts and me do not really belong together.

As many of you may well know, my OCD tendencies just can’t seem to stand what my strange mind considers “the mess” that typically comes with making various crafts.

I mean even when I was in elementary school (over 100 years ago), the art room – with it’s paint stains, it’s dried clay smeared on the kiln, the dried and flaking glue spots stuck on the desks and floor, the drippy, sticky, paint brushes and mixed up paints, the boxes of dusty, broken, colored chalk, the plethora of half used crayons, ribbon remnants, and left over pieces of various fabrics, and the overwhelming smell of whatever it is that an art room smells like, gave me a case of the anxieties and a colossal headache!

So…with my particular, peculiar, brain you can see that for a girl like me…this was a bit of an unexpected attempt to express my own particular brand of creativity.

I mean have you used a glue gun lately?  What is with all the sudden globs and stringy stuff that gets all over the place.  Geez.

That being said…let me tell you how surprised I was to find – GASP – it was So. Much. Fun!  Maybe, just maybe, one can teach an old dog (me) new tricks!

From whence did my inspiration come you ask?  I mean, with that much pent up anxiety what on earth could possible inspire me to undertake a…gulp…craft?

Well, Emerald Isle of course!

My oasis of happiness and relaxation, where crazy ideas I’d never fathom in my regular life enter my mind and seem…well,

Doable!

So the wreath idea came from a scruffy little island that floats in the middle of Bogue Sound that you can see directly from our deck – aptly named Shell Island.

See it there?  It’s the little island on the right, behind the sailboat?  With the white sandy beach wrapping around it???  Shows ya about how far we have to paddle…Not bad!

Give ya one guess what we collect there…yep.  Shells.

And hermit crabs, and blue crabs, clams, oysters, and sometimes we’re even lucky enough to see dolphins swim in pods right by us as we canoe or kayak over to collect our booty.   We actually saw a mother and baby come up out of the water and look at us one time.  It was AMAZING, but I digress.

So anyway, it takes only about five minutes or so of paddling time depending on the tide and our family loves to haul ourselves over there to wander aimlessly around exploring for unexpected sea treasure, and reveling in the freedom and simple bliss of unstructured and relaxed family time.

The boys roam like wild ponies racing from one end of the island to the other – free from all the rules and regulations of their normal day to day school lives. They delight in exploring the little island, finding its random treasure, and nearly explode with excitement when the Top Gun type military jets fly right over us practicing their maneuvers. It’s like our our own, personal, air show and I can’t help but hum “…cause I’m proud to be an American, where at least I know I’m free…”

Dixie, our lovable Golden Retriever, also eats this place up – literally sometimes – as she gets to wander off leash wherever she chooses to go, digging up curiosities she finds in the sand.  We love hanging out on the ‘shelly’ beach edges watching the boats go by on the intercoastal waterway waving to the sailors and seagulls like they’re old friends.

And it was on our little excursion over to Shell Island this past April, that the kids and Jason and I snagged another bunch of pretty scallop and other (I have no idea what) shells to add to our treasure collection. Routinely we purge these collections after their initial sparkle wears thin and they fall prey to my “get rid of all this stuff” mannerisms.

But this time (for some unknown reason) was different, and so we brought them back to the canoe, squashed them between the five of us, and took them back up to our place, where they were immediately plunged into soapy warm water to wash and were committed, by my firm declaration, to some sort of craft keepsake to further personalize our little beach pad.  We dried them on the deck, piled them into a ziploc bag, and happily drove them four hours back to Winston Salem.

And a few weeks later…Ta Da!  Here’s the craft keepsake!  What do ya think?

A wreath for our front door, our wall…our something.  And there was nothing to it but a little beach fun and a glue gun, a $5 grapevine wreath, a couple purchased starfish, and a big bow from AC Moore (not an affiliate link – just where I actually went) and voila!

I actually did it.  Not so hard Laura…geez.

So now, I’m gonna load it up carefully and bring it back to the beach with us to display.  A little touch of what I’ll playfully call Laura’s Choice Coastal Decor, chock full of Happy Kubicki Family Shell Island memories…

You Light My Life.

You Light My Life

Hello Everybody!

Well it’s post Mother’s Day and I wanted to check in on all of you Moms to say I trust you felt celebrated, appreciated, and all the other “a-teds” a mother should feel on that day!  I know from all the FB postings and what nots you joined me in receiving your share of special brunches, lunches, dinners, cards, flowers, spa days, and what have you from your adoring first priorities and loves of your lives.

This was one of my favorite gifts.  I received it from my nine year old son Jack. He made it at school, and gave it to me Monday morning after giving me his card and gifts on Mother’s Day.  He was a little bashful and embarrassed for having forgotten it on Sunday.

“I love you more than anything Mom” he said

…and he purposefully walked into the kitchen through the hubbub race we call Monday mornings, and quietly and shyly presented it to me, complete with a warm, full, two-arm, Jack hug and sparkling blue eyes that he got not from me, but from his Dad (mine are brown).

And I’m sharing it with you because of all the lives you light, including mine.

I hope you had a very Happy Mother’s Day.  Keep letting that beautiful light of yours shine…

Easy Kiwi Berry Fruit Flowers

Hey there!  Feeling Springy?  You already know how much I luv luv luv flowers.  Well,  I found a really cute food flower idea on Pinterest that I thought I might share with you because…

They’re Springy.

They’re Tasty, Healthy, and Fun To Make!

How can you go wrong with that?

And they’re really so simple.  To be honest at first I wasn’t sure about the prep.  I’m not the world’s craftiest.  And if you’re like me I assure you they are easy peasy and you can of course do all different types of fruit this way – Cantaloupe, Watermelon, Honeydew, Apples, Pears, Mangos…what have you!

I call them Easy Kiwi Berry Fruit Flowers.  Aren’t they cute???

I used these with great success at my Mom’s recent Surprise 70th Birthday Bash.  They definitely created a “WOW” factor on the table with the other food and the guests and family just gobbled them up.

And as you might surmise, they’re not just for parties!!  My kids lllllllooooovvvvveeeee them too.  Check this out.

First you wash, dry, and peel the kiwi and berries.  Next you slice the kiwi (or your fruit of choice) and shape them with any cookie cutter shape you like.  (My mother-in-law gave me a bunch of vintage shape cutters ages ago and they were perfect for this – thanks Mom!)

Be sure to save fruit pieces you don’t use for these pretty babies.  Throw them in your salad that night, or add to any fruit salad ideas you have or you can do like me and…

Eat them!

Now once your berries are dry, grab a toothpick or skewer of your choice, stack the fruit, and hold together with said pick.  I liked the look of a couple different types of berries for plate presentation and the white platter really set them off.

There you have it.  Pretty little edible spring flowers.

Wonder what other shapes one could make?  Hmmm.  Makes a great kid/kitchen edible craft idea too!

Spring Fling!

Hello Friends!  Welcome to today!

I just HAD to share these beautiful flowers with you!  I absolutely LOVE flowers!  Look at that marvelous, saturated, velvety, color!  Heavenly.

Jack, Joseph, and I were at Salem College today.  Jack takes piano lessons there and while he’s doing that, Joseph and I do homework.  And when that’s done, we walk around on nice days, climbing trees and looking at the beautiful flowers that are offering up their full glory free for our eyes to see and our hearts to enjoy this time of year.

And here are some breathtaking azaleas – just look at that orange!!  What a color combo!  So. Very. Gorgeous!

Oh and by the way…do any of you know what the bluish/purple flowers are?  They hang down and have a beautiful, unique type of star shape to them and they have a nice fragrance too.  I’m going to have to look them up…

And so…Joseph and I had some excellent, springy, “Mommy and Me” time enjoying the trees, the flowers, the weather and each other for a little bit today.

And that’s all today – it sure was beautiful complete with sunshine, brilliant spring colors, and each other…and we were so thankful to be able to meander around together for a few stollen moments – our very own little “Spring Fling” if you will.

Hope you’ve gotten or are able to squeeze a spring fling in for yourself – in spite of any obnoxious allergies that we all seem to have during the blooming season!  Sniff sniff…allergies – BE GONE!
